Chocolate Almond Birthday Cake

I received a cake order for something chocolaty and nutty, and ended up with this: A Chocolate Almond Birthday Cake. I used my favorite chocolate cake recipe modified from one of my favorite bloggers, and my standard chocolate buttercream recipe.

Chocolate Cake Batter:

  • 4 ounces bittersweet chocolate, finely chopped
  • 1/3 cup Dutch-processed cocoa powder
  • 3/4 cup hot coffee
  • 3/4 cup bread flour
  • 3/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/3 cup vegetable oil
  • 2 eggs
  • 2 teaspoons white vinegar
  • 1 teaspoon vanilla extract

Chocolate Buttercream:

  • 1 1/2 cups (3 sticks) unsalted butter, at room temperature
  • 6 cup powdered sugar
  • 3/4 cup Dutch-processed cocoa powder
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 8 ounces chocolate (milk, semisweet or dark), melted and cooled
  • 1/4 cup heavy cream

Chocolate Ganache:

  • 1/2 cup heavy cream
  • 1/2 cup dark chocolate chunks
